Carboxy Methyl Cellulose

Carboxy-Methyl-CelluloseWe are engaged in offering our clients Carboxy Methyl Cellulose (CMC; E466), which is hygienically processed. This chemical is a derivative of cellulose formed by its reaction with an alkali and chloroacetic acid. The degrees of substitutions vary in different preparations, the general range being 0. 6 – 0. 95 derivatives per monomer unit. Furthermore, the cmc structuren is based on the glucopyranose polymer of cellulose.

Functionality and Uses:

  • The compound rapidly dissolves in cold water and is mainly used to control viscosity without gelling
  • Used to improve the volume yield during baking, if the viscosity drops during heating, thus, encouraging gas bubble formation
  • Excellent to be used for its water-holding capacity as this is high even at low viscosity, mainly when used as calcium salt. Thus these are perfect to reduce fat uptake into fried foods and for retarding staling
  • Used as a phase and emulsion stabilizer (e. G. With milk casein), thickener, and suspending agent
  • Owing to its quality of viscosity control, these cross-links through lactonization at low ph, between carboxylic acid and free hydroxyl groups
